Ingredients and Preparation for Grilled Salmon with honey and soya toasted almonds
 
SERVES 2 
 
2 fillets of salmon
100g crushed almond flakes
2 tbsp of soya sauce
1 heapped tbsp of honey
2cm of ginger root grated 
1 tsp of coconut oil or oil oil 
half of lime juice
seasoning
 
 
Preheat the oven to 200C.
First season salmon and coat with grated ginger and place on foil. Heat 1 tsp of coconut oil in a frying pan over medium high heat, add and fry crushed almonds until lightly golden.
Add the honey and soya and carmelise lightly for 1 min and immediately pour the mixture on the top of the salmon and rap it in a foil. Grill for 20-30 min, may need a little longer depending on how thick the fillets are.
 
 
 
For the salad:
 
1 fennel bulb, very finly sliced
1 red chilli finely chopped
bunch of coriander finely chopped
2 radish finly sliced
1 tbs of soya
1 tbs of sesame oil
half juice of lime 
sprinkle of stevia for sweetness
 
Mixed all ingredients together and serve.
