Polish Sauerkraut salad

Seriously you do not need to buy expensive probiotics! There are plenty of natural superfoods that are inexpensive and easy to prepare.
Polish sauerkraut is essentially a fermented pickled cabbage. I grew up on these foods in Poland and it was normal for me, but they have now become recognised as a superfood and a natural probiotic. There are plenty of articles quoting the many benefits and its so simple to make a tasty salad with it.

INGREDIENTS
 
Organic Sauerkraut (you can buy in most supermarkets)
2 carrots (shred them)
1 red onion (cut finely)
A bunch of parsley (cut finely)
2 tablespoons of olive oil
black pepper
pinch of stevia (teaspoon of brown sugar if you havent got stevia) 
 
PREPARATION
 
Drain Sauerkraut and squeeze out all the water
In a bowl combine; Sauerkraut, carrot, onion, parsley
Mix oil with stevia (or sugar) until the stevia/sugar has dissolved
Pour over the salad, season with pepper and toss.
Serve or refrigerate.
