Summer BBQ Chicken Skewers

Marinated BBQ chicken skewers — great for summer and packed with protein. Marinate overnight for maximum flavour.

Ingredients

  • 1kg chicken breast, cut into small chunks

For the marinade:

  • 1 tbsp soya sauce + extra sea salt
  • 1 tbsp honey
  • 1 tbsp apple cider vinegar
  • 1 tsp ground cumin
  • 1 tsp turmeric
  • 1 tsp Chinese 5 spice
  • ½ tsp cayenne pepper
  • 1 clove garlic
  • 2cm ginger root, shredded

To serve:

  • Greek yoghurt mixed with harissa spice, or fresh chopped mint
  • Green salad of your choice

Preparation

  1. Mix all marinade ingredients together in a bowl.
  2. Rub the mixture into the chicken chunks thoroughly.
  3. Cover and place in the refrigerator to marinate for at least 2 hours, or ideally overnight.
  4. Thread the marinated chicken pieces onto skewers.
  5. BBQ for about 10 minutes, turning often, until cooked through.
  6. Serve with Greek yoghurt mixed with harissa or fresh mint, and a green salad.
