Crunchy Crackers

Made from flax seeds and almonds โ€” a nutritious, high-protein alternative to bread. Great with dips, cheese, sliced vegetables, or crumbled onto salad or soup.

Ingredients

  • 80g ground flax seeds
  • 70g ground almonds
  • 1 tbsp grated parmesan
  • 2 tbsp miso paste
  • 2 tbsp water
  • 1 tsp ground cumin
  • ยฝ tsp cayenne pepper
  • 1 tsp caraway seeds

Preparation

  1. Preheat oven to 180ยฐC. Line a baking tray with a baking sheet and spray or brush with olive oil.
  2. Put all ingredients into a food processor. Blitz until you have a smooth paste.
  3. Spread the cracker dough over the baking sheet.
  4. Place another baking sheet on top and use a rolling pin to press down to make the dough smooth and even โ€” about 1cm thick.
  5. Bake for 15โ€“18 minutes until the middle is no longer soft.
  6. Allow to cool slightly, then break into pieces.
Eliza's tip: Be a little naughty and eat with goats cheese โ€” it's lower in fat than most cheeses and high in protein. Add a little onion chutney if you like, but just a little!
