Polish Sauerkraut Salad

You don't need expensive probiotics — this traditional Polish superfood is inexpensive, easy to make, and incredibly good for you. Eliza grew up on this in Poland.

Ingredients

  • Organic sauerkraut (available in most supermarkets)
  • 2 carrots, shredded
  • 1 red onion, finely cut
  • A bunch of parsley, finely chopped
  • 2 tablespoons olive oil
  • Black pepper
  • Pinch of stevia (or 1 tsp brown sugar if you don't have stevia)

Preparation

  1. Drain the sauerkraut and squeeze out all the water.
  2. In a bowl, combine the sauerkraut, shredded carrot, red onion and parsley.
  3. Mix the olive oil with stevia (or sugar) until the sweetener has dissolved.
  4. Pour the dressing over the salad.
  5. Season with black pepper and toss well.
  6. Serve immediately or refrigerate.
