Ingredients
Organic sauerkraut (available in most supermarkets)
2 carrots, shredded
1 red onion, finely cut
A bunch of parsley, finely chopped
2 tablespoons olive oil
Black pepper
Pinch of stevia (or 1 tsp brown sugar if you don't have stevia)
Preparation
Drain the sauerkraut and squeeze out all the water.
In a bowl, combine the sauerkraut, shredded carrot, red onion and parsley.
Mix the olive oil with stevia (or sugar) until the sweetener has dissolved.
