Protein Chocolate Chip Cookies

Ingredients

  • 3 tbsp ground flax seeds
  • 170g ground almonds
  • 3 tbsp unsweetened coconut flakes
  • 1 tsp ground cinnamon
  • ½ tsp ground nutmeg
  • ½ tsp baking soda
  • Pinch of salt
  • 1 scoop protein powder (Eliza uses Biotrust)
  • ½ tsp stevia
  • 100g dark chocolate chips
  • 3 tbsp water
  • 2 tbsp almond milk

Preparation

  1. Preheat oven to 180°C and line a baking sheet. Brush with oil.
  2. Mix the ground flax seeds and water in a bowl. Set aside for a few minutes to thicken.
  3. Mix all dry ingredients together in a large bowl.
  4. Add the flax seed mixture, almond milk, and chocolate chips. Combine well.
  5. Divide the mixture into 14 portions. Shape into balls then flatten between your palms into cookie shapes.
  6. Arrange on the baking sheet and bake for 10–20 minutes until golden.
