Grilled Salmon with Honey Soya Almonds & Fennel Salad

A light, quick summer lunch โ€” salmon coated in caramelised honey soya almonds, served with a fresh Asian-inspired fennel and coriander salad.

Salmon โ€” Ingredients

  • 2 salmon fillets
  • 100g crushed almond flakes
  • 2 tbsp soya sauce
  • 1 heaped tbsp honey
  • 2cm ginger root, grated
  • 1 tsp coconut oil or olive oil
  • Juice of ยฝ lime
  • Salt and pepper

Fennel Salad โ€” Ingredients

  • 1 fennel bulb, very finely sliced
  • 1 red chilli, finely chopped
  • Bunch of coriander, finely chopped
  • 2 radishes, finely sliced
  • 1 tbsp soya sauce
  • 1 tbsp sesame oil
  • Juice of ยฝ lime
  • Sprinkle of stevia for sweetness

Preparation

  1. Preheat oven to 200ยฐC.
  2. Season the salmon and coat with grated ginger. Place on foil.
  3. Heat 1 tsp coconut oil in a frying pan over medium-high heat. Add the crushed almonds and fry until lightly golden.
  4. Add the honey and soya sauce and caramelise lightly for 1 minute.
  5. Immediately pour the almond mixture on top of the salmon and wrap it in the foil.
  6. Grill for 20โ€“30 minutes depending on thickness of the fillets.
  7. For the salad: mix all the fennel salad ingredients together and serve alongside the salmon.
